To the people who eat rice everyday, like myself

I like eating rice a lot. Some weeks, I eat it every single day, sometimes two times a day. My Mother will usually say me that if I don't eat rice, I haven't eaten anything. In some aspects, I consider this true, just not in the literal or scientific sense.

Last month I was trying to reduce my consumption of rice because I read somewhere online that eating white rice regularly raises or spikes your insulin levels, which can lead to diabetes and other health problems. I couldn't go through with it and only lasted about three days before quitting. Eating bread for breakfast just didn't sit well with me, but I enjoyed having yam for dinner when it's not rice. Problem is it was too expensive and I always tired from peeling it each evening after coming home from work. It can be itchy too.

Rice is convenient and can fill my belly. If you were to eat rice with soup or stew, which you would get vegetables and protein, I do not necessarily consider eating of rice the villain others usually portray it to be. Though I'm not a nutritionist, and perhaps I am simply justifying my lifestyle choices.

I notice that when I have eaten half a plate of jollof and then I am seated in front of my computer for hours, I feel exhausted and lethargic. Is it the food or the mixture of many factors, like the chicken that is to blame?

Some people have claimed that they love the health benefits of brown rice but it can take such a long time to cook and it is not very pleasant to eat, my own opinion though, maybe some people would actually like it. I want to learn how to enjoy eating it, I simply don't like the brown rice taste. I feel like it should be something we add sugar and water to.

Rice in and of itself is not harmful. Perhaps it is more likely to be a problem when rice is all that is eaten or consumed in excess, like the amount of food typically served at a buffet. Rice must be balanced with other sources of food in your diet if you intend to make it a daily meal.

What's cool is I'm actually planning on making my own rice farm, I'm speaking with my dad about it. I know it'll require a lot of work but I believe that's worth it if it can be a successful business for me.
