My first thoughts about food inspection was some middle aged man with a clip board walking around in a field, but to be perfectly honest when you're checking the records from late 2025 and early 2026 the picture couldn't be any further from reality. Right now, a huge shift is happening and the unprecedented record number of recalls of 2025 prompted the entire industry to change its strategy. From being reactive, the industry had to become
predictive.

We see how climate change alone has changed how safe each area was considered for agriculture in 2026. Pathogens and mycotoxins started showing up in previously safe zones, and the fact that a region had a good track record five years ago became irrelevant since the weather caused changes to soil composition. That is why the so called Digital Product Passport becomes extremely popular right now. More and more QR codes appear on the product, giving current information about soil humidity levels and the chemicals used.

Inspection is also a high stakes game. Politics will put its hands in too. Just take for example the recent trade dispute between Spain and the United States about aflatoxin content in nut products. One failed inspection leads not only to loss of products, but also to international relations tensions and economic difficulties for a whole region.

The industry relies on a very complex system of inspection these days. They call it an AI Compliance Brain. Instead of relying on the presence of salmonella contamination in the factory, sensors and machine vision are able to grade produce and detect even slightest traces of damage. It may sound strict, but there are increasing levels of food fraud across all industries strict is necessary.

Without an invisible inspection of produce, we risk facing total destruction in the global supply chain and it is only thanks to it that every bite of an apple we have is safe and healthy. Well at least most bites.
