Today I am happy to share my entry for the Recipe of the Day Contest. I made delicious chicken pulao with lots of love. This treat is close to my heart. I truly hope you all enjoy it just as much as we did at home. A sincere thank you to our lovely ma’am @crismenia for organizing such a fantastic cooking contest. It giving us the opportunity to share our passion for food.

Step 1 !

I take three large onions. I peel and slice them thinly. Then I heat a generous amount of ghee in a wide pan over medium heat. I add the sliced onions. I sauté it slowly. I stirring occasionally. I cook until they slowly turn golden brown and develop a sweet and rich aroma. I add garlic paste.

Step 2 !

This process may take ten to fifteen minutes but it is essential. As these caramelized onions will add depth, flavor and a natural sweetness to the chicken rice. This making the dish truly flavorful and aromatic. The onions turned out golden brown beautifully.

Step 3 !

When the onions turn golden brown and release their sweet aroma. I add a little water to the pan. When the water hits the hot pan. It creates a delightful sizzling sound. The amazing fragrance fills the kitchen. This step helps deglaze the pan besties. After adding the water. I add four big tomato. I added the slices of the tomatoes to the pan. I stir so the tomatoes mix with the onions and water.

Step 4 !

Then I add chopped green chili slices to the pan. It depending on how spicy you want your dish. I stir with the onions and tomatoes. So the heat infuses evenly. After the chilies. I add the three tablespoon of salt. Then add three tablespoon for red chili flakes. I mix well to combine. The spices will blend beautifully with the ingredients.

Step 5 !

I cook until it becomes a rich, aromatic paste. It made with a deep golden brown color. This step enhances the flavor. It makes the base truly delicious. When the paste is ready. I add the well washed chicken to the pan. Along with the chicken add tamarind (imli) that has been soaked in a little water for a few minutes. I stir gently to combine. It allowing the tangy flavor of the tamarind to infuse into the chicken. I cook for a while so the chicken absorbs all the spices and the wonderful aroma of the base.

Step 6 !

Then I add ½ cup of yogurt (dahi) to the pan. I mix it thoroughly with the chicken and spice mixture. I sauté for a few minutes. This adds a creamy texture and a subtle tang. It enhancing the overall flavor of the dish. After the yogurt is well incorporated. I measure the rice. For 2 bowls of rice, add 4 bowls of water to the pan. I stir gently to combine. I making sure the rice is evenly submerged in the flavorful liquid. I cover the pan with a lid and cook on medium heat.

Step 7 !

While the water and chicken mixture were coming to a boil. I wash the rice thoroughly until the water runs clear. I soak the rice for some time to help it cook evenly and become fluffy. When the water in the pan starts boiling. I add the soaked rice. I stir everything. So the rice mixes evenly with the chicken and spices. I cook for a few minutes. This allowing the rice to begin absorbing the flavorful broth.

Step 8 !

The water begins to absorb into the grains. Then a wonderful aroma fills the kitchen. When the water is almost completely absorbed. The rice is partially cooked. I reduce the flame and cover the pan. I let the rice cook on low heat (dum) for about twenty minutes. This slow cooking allows the rice to become fluffy. The chicken to cook fully. The spices and flavors to blend beautifully. It creating a rich, aromatic and delicious chicken pulao.
