"Recipe of the Day, Week No. 96: (Quick Chicken Karahi with Homemade Masala)"

1 - Make your own Chicken Karahi (include ingredients, quantities, and steps) using my recipe or any other recipe of your choice.

First, I finely chopped the onions and placed them into a large pan. I added ghee and then made a small space in the center so the onions could cook evenly. After that, I let the onions sauté gently until they started turning light golden and released a pleasant aroma, forming the perfect base for the dish.

After that, I washed the tomatoes thoroughly and sliced them evenly. Adding a good amount of tomatoes to the chicken makes it more flavorful and gives the gravy a rich, delicious taste. Once sliced, I added them to the pan and let them cook slowly until they softened and blended well with the onions and ghee.
Then I added a little more ghee as needed and adjusted the oil. After that, I added the chicken and mixed it well with the masala so that every piece was evenly coated. I let it cook for a while, stirring gently, until the chicken started changing color and absorbed the flavors.

After that, I added the spices so they could blend well into the chicken and help it start cooking properly. At this stage, I had only added salt and black pepper. I mixed everything thoroughly and let the chicken cook gently, allowing the spices to release their aroma and enhance the flavor.

After that, I took ginger, garlic, and green chilies and chopped them not too finely, as I wanted them to blend smoothly. I then crushed them together to make a fresh mixture. When the chicken was nicely roasted and had started to soften, I added this mixture to the pan and mixed it well, letting its fresh aroma spread and enhance the taste of the dish.
I had already put the whole mixture, which had become soft, on the side, which contained tomatoes and onions, and I had fried the chicken separately in ghee.
When the chicken became nicely tender, I added the blended onion and tomato mixture to it. I mixed everything very gently by hand and lowered the flame slightly, making sure the masala cooked evenly and didn’t stick to the bottom of the pan.

After that, as the gravy began to form, I started adding more spices. I added red chili powder for heat, turmeric for color, and garam masala to enhance the overall flavor. I mixed the spices well so they blended smoothly into the gravy, giving it a rich aroma and a deep, delicious taste.
After that, I added yogurt to it and stirred it well. Here my chicken kadai was completely ready. I added dhaniya on top of it.
And with that, my delicious chicken fry was ready. It didn’t take much time at all. When we use fresh and good-quality ingredients, the dish cooks faster and turns out even better. This recipe was very easy to prepare, and I made the chicken fry using only homemade spices, without using any market-bought masalas.
