Today’s recipe is “Rajasthani Mava Kachori” – a famous royal dessert from Rajasthan. This crispy, deep-fried kachori is stuffed with sweetened mawa (khoya), dry fruits, and aromatic spices, then dipped in fragrant sugar syrup. Mava Kachori is especially popular during winter and festivals, as it is rich, indulgent, and full of traditional flavors.

🍳 Cooking Procedure 🫕
Step 1: Prepare the Dough
Take a bowl and add flour. Then add ghee (½ cup) and mix well. Using a little water, knead it into a smooth dough and let it rest for 20 minutes.

Step 2: Prepare the Sugar Syrup
In a separate pan, add 1 cup sugar and ½ cup water. Boil it until it reaches a syrupy consistency.

Step 3: Prepare the Filling
In another bowl, add mawa (khoya) and sugar. Then add almonds and raisins, and mix everything well.

Step 4: Shape the Kachoris
Make small balls from the dough and roll each one into a small disc. Place some of the mawa mixture in the center and fold/shape it into a kachori. Repeat for all the kachoris.

Step 5: Fry the Kachoris
Heat ghee in a pan and deep-fry the kachoris until they turn light brown.
