[Steemit Challenge S30/W1] | Carrot Rasmalai Recipe: A Sweet Twist for Ramadan Evenings

In my family, Ramadan evenings are filled with gratitude and, of course, a little something sweet after Iftar. This week, as part of the Steemit Challenge S30, I decided to tackle a unique dessert that blends the traditional taste of Rasmalai with a healthy twist: Carrot Rasmalai.
Growing up, standard Rasmalai was a staple. But in recent years, I've enjoyed experimenting with classic recipes to add more vegetables and natural sweetness. This Carrot Rasmalai is a result of that. It’s creamy, aromatic, and surprisingly light.
Let me share how I make this special dessert.
🥕 Carrot Rasmalai: The Recipe
Preparation Time: 20 mins
Cooking Time: 45 mins
Servings: 6-8
Ingredients:
For the Rabri (Sweetened Milk):
1 litre Full-fat Milk
½ cup Sugar (adjust to taste)
4-5 Green Cardamom pods, slightly crushed
A pinch of Saffron strands (soaked in 1 tbsp warm milk)
A handful of Pistachios & Almonds, slivered for garnish
For the Carrot Pedha (Balls):
2 cups Carrots, finely grated
1 tbsp Ghee
½ cup Milk Powder
¼ cup Sugar
¼ tsp Cardamom powder
Step-by-Step Instructions:
Step 1: Preparing the Rabri
In a large, heavy-bottomed pot, bring the milk to a boil.
Once it boils, lower the heat to a simmer. Add the crushed cardamom pods and saffron-milk mixture.
Let the milk simmer on low heat, stirring occasionally, until it reduces by about half and thickens slightly.
Add the sugar and stir well until it dissolves. Turn off the heat. Set aside to cool slightly.
Step 2: Making the Carrot Pedha
In another pan, heat ghee over medium heat. Add the finely grated carrots.
Sauté the carrots for 5-7 minutes until they are soft and the raw smell is gone.
Add the sugar and mix. The carrots will release water. Cook until all the water evaporates and the mixture thickens.
Add the milk powder and cardamom powder. Mix quickly to avoid lumps.
Continue cooking for a few more minutes until the mixture forms a dough-like consistency and leaves the sides of the pan.
Transfer this mixture to a plate and let it cool completely.
Step 3: Shaping the Pedhas
Once the carrot mixture is cool, grease your palms lightly with ghee.
Take small portions of the dough and shape them into smooth balls. Flatten them gently to form small patties (pedhas).
Step 4: Assembling the Carrot Rasmalai
Reheat the rabri slightly if it has cooled down too much. It should be warm.
Gently drop the prepared carrot pedhas into the warm rabri.
Let the pedhas soak for at least 30 minutes. This allows them to absorb the flavors of the sweetened milk.
Do not boil the milk again after adding the carrot balls.
Step 5: Garnish and Serve
Transfer the Rasmalai to a serving dish.
Garnish generously with slivered pistachios and almonds.
Serve it chilled for the best taste. It's the perfect sweet end to a long day of fasting.
