Cornmeal (Tuwo) is not complete until you have it accompanied with soup made from beans and beef soup. This meal is a very popular one in my country (Nigeria), western Africa. I will be showing you how I made everything from the scratch. Be my guest on this till the end as you are just about to learn more about foods.

Cornmeal (Tuwo)

Cornmeal is a very popular food in the south-west region of my country (Nigeria) which has the local name Tuwo and just as the name implies, it's a meal made from finely grinded dry corn, otherwise, powder corn.

The Ingredient for the cornmeal is corn powder but I stated at the beginning that the meal isn't complete until you prepare the special soup for it.

Preparation Steps

  • Fill the pot with a small quantity of water. Allow it to attain the boiling point.

  • Make a paste of the corn powder.

  • Pour the paste corn powder into the water and subsequently add corn powder to it to make it firm.

  • Stir till it get solidified.

Beans soup (Gbegiri) for Cornmeal

This is a special soup used for eating the cornmeal, it's a delicious soup and it's easy to prepare. I will be showing the ingredients needed for this soup and the cooking steps below.

Beans soup(Gbegiri) ingredients

  • Brown-eyed or black-eyed beans.
  • Palm oil.
  • Stock cube.
  • Salt.

Preparation Steps

  • Get the desired quantity of the beans depending on how much you want the soup to be.

  • Peel off the beans' coating. This is easily done by soaking it in cold water to soften the coating.

  • Soak in cold water for about 1hr for easy cooking.

  • Pour inside a pot and cook on low heat for about 1hr till the beans is softened enough for blending. Note: Keep the cooking water on the same level with the beans, such that you have to fill in water from time to time throughout the cooking period, this is done to avoid watery soup.

  • Allow it to cool and blend it using any mechanical means (electric blender) or manual means; the aim is to crush the beans to the smallest granules.

  • Pour into a pot. Add 1 teaspoon of palm oil, 2 teaspoon of pepper powder, 1 stock cube and salt.

  • Allow it to cook for 5mins.

Beef Soup

I have my beef soup prepared earlier and the ingredients are; Tomatoes and pepper and onions (blended together) with seasonings and cooked for 45mins. Finally add the beef to the soup, then the beef soup ready.

The cornmeal, beans soup and beef soup is ready. Serve altogether in the same plate or container, get your eating spoon and enjoy the meal.
