Cacti for sale! Makes good soup.

Here in Mexico lots of people eat a lot of nopal cactus. This is a picture of some I saw for sale in an open air market. They scrape off the spines before they cook it. I have had it in soup once and enjoyed it. I have heard it described as tasting like sour green beans, and that seems relatively accurate.
