Nicaragua is great. I went everywhere you did except for Leon and the Corn Islands, but I'm pretty sure I drank less. Hahaha! You're creating memories that will last a lifetime.
It really was great and some of our best travel memories and friends were made there. I would happily go back tomorrow and do it all again.
