It will be a bit hard not to resemble the nintendo original as there aren't many variations you can do with a mushroom considering it must be pixelated, but I'll try my best.

Well, it must be far enough to not trigger copyright violation. Besides that you can stay as close to the original as you like.
And it doesn't have to be a mushroom.
