Broccoli Quinoa Salad with Peanut Butter Dressing

A hearty, healthy, and very satisfying lunch or dinner salad packed with good-for-you ingredients and the best peanut butter vinaigrette. If you never tried quinoa before then you are missing out on a fluffy, gluten-free, delicious whole pseudo-grain that works beautifully in pilafs, salads, or casseroles.

Though technically quinoa is a seed, Inca’s called it their “Golden Grain” since it increased the stamina of their warriors and hunters. Although quinoa dates back more than three to four thousand years, lately it is being referred to as “ The Super grain Of The future” and has become a hype in the healthy food world.

Quinoa is packed with protein and contains more fiber than most other grains. It has high levels of iron, vitamin B2, manganese, and magnesium.

Though quinoa is high in carbohydrates and should be eaten in moderation, it is by far one of the healthiest grains to add to your diet.

Ingredients

For the salad

1/2 cup uncooked quinoa
1/3 cup finely chopped spring onions
1.5 cup small broccoli florets
1/2 cup finely chopped bell pepper
1/2 cup grated carrot

For the dressing

1 tbsp peanut butter
2 tsp sesame oil
1 tbsp soy sauce
1/2 lime, juice only
1 tbsp extra virgin olive oil
Sea salt and black pepper, to taste

Directions

  1. Cook quinoa according to the instructions on the package. When ready allow to cool slightly.
  2. Lightly steam broccoli and cool under running cold water.
  3. Whisk together all dressing ingredients. Set aside.
  4. Combine all salad ingredients and drizzle with peanut dressing.

Funny to say this, but i just recently discovered Quinoa, let's say 4 yrs back, I was not aware of this amazing product before! But since, I just love it now!

Awesome idea. I always use quinoa as a replacement for rice but had not thought to use it in a salad. My husband and I have a similar peanut butter dressing we love to use when we make buddha bowls so i bet this would be a great option for us! Thanks for sharing.
