Coffee-Rubbed Pork Tenderloin with Seasonal Vegetables and Mustard-Honey Sauce

A one-pot wonder! The pork tenderloin gets a boost of flavor from the coffee rub. Although I don't eat pork very often, I really loved this recipe.

Ingredients

  • 14 ounce pork tenderloin
  • 2 cups pumpkin, chopped
  • 2 cups fresh green beans, chopped
  • 1 cup bell pepper, chopped
  • 1 clove garlic, minced
  • 1/2 cup onion, chopped
  • sea salt, to taste
  • black pepper, to taste
  • 1/2 tbsp ground coffee
  • 1 tbsp extra virgin olive oil
  • 1 tbsp mustard
  • 1 tbsp honey
  • 1 tbsp water

Directions

  1. Preheat oven to 400°F or 200°C.
  2. Rub pork with salt and pepper. Heat cooking oil in a large cast iron skillet or dutch oven over medium-high heat. Sear pork on all sides until browned. This will take 7-8 minutes, turning every 2-3 minutes. Transfer the pork to a plate and reduce heat to medium.
  3. Add extra cooking oil to skillet if necessary. Saute onion for 2-3 minutes, stirring frequently.
  4. Stir in bell pepper, beans, and garlic. Cook, covered for 4 to 5 minutes, stirring regularly.
  5. Finally, add pumpkin and cook for 3-5 minutes more.
  6. Meanwhile, in a small bowl, stir together coffee and extra virgin olive oil. Rub mixture on all sides of the pork. Add rubbed pork on top of the vegetables and transfer skillet to the oven. Roast, uncovered, for 15 to 18 minutes or until internal temperature of pork reaches about 145°F or 65°C.
  7. Meanwhile combine mustard, honey, and water in a small bowl. Set aside
  8. When pork is cooked, transfer to cutting board and let rest. Stir mustard mixture into the vegetables and return to the oven for 5 minutes.
  9. Slice pork and serve with vegetables.

Fantastic idea! Although I never thought of combining pork with coffee, I love both ingredients so I think the flavor profile would work for me. I love the recipe, but one thing I would recommend would be to definitely cook the pork to an internal temp of 165 degrees F. You have to be very careful with pork. However, you don't want to overcook it, so as long as the pork holds the temp of 165 for 15 seconds you are good to go. This looks great and I'm definitely going to give it a go.

Thanks for the tip. Always thought it was 145F. However, we don't have a meat thermometer, so we always cook on how the meat feels and looks.

It was 145F, but that changed roughly 10 years ago or so. I only know this stuff because I worked as a chef in hotels and resorts for more than 20 years and I was required to take a food safety certification course every year. I believe they changed it after they found evidence that some parasites known to be in pork could resist temperatures up to 160F.

If you cook pork all the time then you probably don't need a thermometer. You can tell from the look and fell of the meat, as you said.

Amazing idea, I have never considered rubbing any meat with coffee. Next time, It's on the agenda - Steem ON!
