Summer Fun! Pineapple Coconut Tropical Freeze!

I really feel it’s always necessary to have ice cream during the hot summer days! Don’t you?

Even more important is “nice” cream!

A few weeks ago I shared how to make coconut milk from Organic unsweetened Coconut. and the bi-product was coconut pulp! Well I have a sweet use for the coconut pulp and I think you‘ll like it!

Summer is quickly coming to an end and its HOT outside! Kids, both big and small need a healthy treat to cool down! I love making sweet treats which aren’t full of refined sugar. I am always dismayed when reading the ingredients on ice cream you buy at the market. Too many additives! Refined sugars! No thanks!

Pineapple Coconut Tropical Freeze!

Ingredients

• Coconut Pulp or Fresh unsweetened Shredded Coconut
• 2 Frozen Bananas
• 1 ½ cup chopped fresh Pineapple
• Coconut Milk

These were so fun to make. I started with my coconut pulp.

• Now, add the pineapple to the processor and process.
  

• Then add the frozen bananas to the coconut pulp and pulse until well blended.
  

You may need to add a bit of coconut milk for consistency Note: If you don’t like the coconut texture and wish to have a really smooth consistency feel free to blend with a high speed blender.

• Pour into popsicle holders and pop them in the freezer overnight!
  

What a great way to cool off on a hot summer day!
