A colorful, healthy and nutritious meal
Contrary to the belief that plant-based food does not provide all required nutrients, plant-based food or vegan food is so colourful, delicious, nutritious and full of varieties.
Few days before I prepared Tofu palak i.e. tofu and spinach curry and beetroot bread.
Spinach and beetroot are available in winter season abundantly but in this season also one can find both vegetables.
Spinach is a good source of vitamins A, C and K, magnesium, manganese, and iron, while beetroot is a great source of fibre, folate (vitamin B9), potassium, iron, manganese, and vitamin C.
Making this combo of tofu-spinach curry and beetroot chapati (bread) is not a difficult task.
For making beetroot chapati beetroot juice or grated beetroot to be added while needing the dough, and make chapati as normal chapati.
For making spinach curry spinach need to wash thoroughly, and blanch. Make a paste of blanched spinach.
Cut tofu in dices and submerge into hot water for few minutes.
Make curry as any other curry.
