Recipe of the Day. Week No 94 : Homemade Desi Panjri – Pure & Delicious 🤤💐

How are you ? I hope you are all good. I am also good. I am thankful for this chance.Today, I'm here to take part in this amazing contest, which is organized by the esteemed Teacher @crismenia ma'am. I'm really proud to be a part of this challenge.. I hope it reaches your expectations.
1 - Make your own Pure Desi Panjri (include ingredients, quantities, and steps) using my recipe or any other recipe of your choice.

| Desi ghee | ½ to ¾ cup |
| Besan | 1kilo |
| Flour | 1kilo |
| Dry fruit | As much as u want |
| Sugar | measuring 1cup |
| Raisins (Kishmish) | ½ cup |

First of all, I took a large pot and put some desi ghee in it so that it melted well.
Then I took a large pan and first sieved one kilo of besan into it.
Then I gently sifted one kilogram of flour and added it to the mixture. The flour was fine and fresh, giving the panjri a smooth base.
While the ghee was melting, I finely ground the sugar and poured it into a measuring cup. The powdered sugar was smooth and lump-free, ready to mix easily later.

Once the ghee was fully melted and nicely hot, I gently added the mixture of wheat flour and gram flour to it. I added it slowly, stirring continuously to avoid lumps. The flours blended smoothly with the ghee and started releasing a lovely aroma as they cooked.
Then I mixed everything gently with a light hand until it was well combined. Slowly, the mixture turned a beautiful light-brown color and released a rich, nutty aroma.

After that, I added almonds and walnuts to the dry fruits and ground them well. I had already kept them while I was coloring the panjiri and the fragrance had started to come out. After a long time, I added the dry fruits to it and mixed it well.
I had already washed the raisins and soaked them in water so they were properly cleaned and softened. This made them plump and fresh, ready to mix in later and add natural sweetness and a soft texture to the panjri.
Then I mixed the panjiri mixture well with the dry fruits and then added raisins to it.
And I put it aside to mix well and I broke up all the small lumps that were inside it so that it would also become soft. It is lying here now.

After that, I added a small portion of the prepared sugar to the mixture and mixed it well. Once it was evenly combined, I added the remaining sugar and stirred again until everything blended smoothly and the sweetness was perfectly balanced.
Instead, I mixed everything thoroughly until it was perfectly combined, so the flavor became richer and the sweetness stood out more. After that, I poured the mixture into separate containers and set them aside.Next, I let them cool completely before covering them, so the texture would stay smooth
When I tried a small bite with warm milk, the sweetness was perfectly balanced and the fragrance was absolutely delightful. My family loved it so much that they kept complimenting me, and everyone kept asking for another serving.
After that, I decided to share it with my neighbors too. They also enjoyed it and praised the taste. It felt so satisfying to see everyone happy and enjoying something I made with love.
A bite of sweetness, a sip of warmth,
and the aroma filled the room.
