FRESH STRAWBERRY TURNOVERS - Simple & Easy (FOOD PHOTO SHOOT & RECIPE)

Before I start talking about these amazing turnovers, I first need to mention an exciting and humbling event this morning. I was mentioned by @susanne in her new monthly post called "Two To Follow." This is a huge honor that was very unexpected. What a pleasant way to wake up on a Monday morning!

It's Monday and we definitely need some simple and easy today. I know I am repeating myself, but it deserves repeating. Earlier today @kaylinart posted a post "Why Do We Eat Fast Food?". My interpretation of her point is that we really don't save time with fast food and certainly do not save money. An interesting note that most of you won't really be able to comprehend, here in the South of Chile, we do not have one, not one 'Drive Thru.' If I wanted to be a slave to a business, starting a restaurant with a drive thru would be a huge hit, but I digress in a huge way, sorry about that.

Following along with my simple and easy theme of this post, I am going to let the photos and the recipe do most of the talking.

RECIPE
Prep Time: 25 minutes
Cook Time: 30 minutes
Total Time: 55 minutes
Yield: 15 - 18 turnovers
Ingredients
Strawberry Filling:
1 1/2 cups fresh strawberries, diced (Try to use fresh if you can, but frozen will work too.)
1 teaspoon lemon juice
1/2 cup sugar
1/2 cup water, divided
2 tablespoons cornstarch
Crust:
1 tablespoon sugar
1/2 teaspoon salt
1 1/2 cups flour
1/3 cup ice cold butter, cubed
3 tablespoons lard or coconut oil
1/4 cup ice cold water
Icing:
2 tablespoons milk
2/3 cup powdered sugar
1 teaspoon vanilla extract
pinch of salt
Instructions
A. Combine strawberries, sugar, lemon juice, and 1/4 cup of water in a medium sauce pan and bring to a boil over medium high heat. Cook for 6 to 8 minutes or until berries have softened and broken down, stirring occasionally.
B. Whisk cornstarch and 1/4 cup of water in a small bowl and add to the mix. Reduce heat to low and simmer until thickened. Remove from heat and cool.
C. Preheat oven to 350 degrees F (180 C) and line a tray with parchment.
D. Combine flour, sugar, and salt in a food processor or large bowl and mix well. Cut in butter and lard until mixture is fine and crumbly. Slowly add ice water and mix until a dough forms.
E, Roll out on lightly floured surface into a layer about 1/8 inch thick. Cut into 4 - 5 inch squares (or any size and shape you would like.) Spread about 2 tablespoons of filling on one corner, leaving about 1/4 inch for sealing, and brush edge with water. Fold the opposite corner over filling and press down to seal. Poke holes with a knife to vent and place turnovers on prepared tray and bake for 12 - 16 minutes or until edges are golden brown.
F. Mix ingredients for icing and drizzle over turnovers when cooled then allow to dry before serving.

Yum. Love empanada-style dishes. These strawberries look amazing. Miss them so much in the tropics! Time to start another berry growing project! The last one didn't work
Yeah, I happen to live in the perfect berry part of the world. The volcanic soil and the climate make the berries super happy. Raspberries won't like your climate, no matter what you do. Strawberries should work, I would think.
