Rubik Cube Fruit Salad

We're in the midst of a real hot and humid summer here in the sub tropical coastal city of Durban, South Africa, so I decided to make something real cool and summery for #FruitsAndVeggiesMonday, a Rubik Cube Fruit Salad, inspired by one of our local supermarkets's fresh produce adverts, not my design at all!
Cutting fruit into equal sized perfect squares proved to be more difficult than I thought at first, but I started so had to see it through to the sweet...sorry... bitter end.

I was left with a ton of off-cuts but made a really delicious smoothie with that, all I added was a little unsweetened Almond Milk, absolutely yum!

I've been making sandwiches for @jaybird's Steemit Sandwich Contest for just over a year already and you've all been inspiring me to start attempting some vegan sandwiches, and must say I've been really surprised at what one can do when you think a little further than just ham & cheese, so #FruitsAndVeggiesMonday has been quite an education for this old gal :)

No cooking with this entry though, as I said it's really been steemin' hot here!
No real recipe, all it took was cutting 27 equally sized fruit squares and packing them to resemble a Rubik Cube, anyone remember those toys? I felt like a child again playing with building blocks ;)

INGREDIENTS

  • Watermelon
  • Cantaloupe melon known as Spanspek locally
  • Mangoes
  • Pineapple
  • Pomegranate & mint leaves

The avocados were too small so hubby confiscated both and ate them au naturale ;)

I was curious about the origin of that funny word Spanspek and came across a lovely little story about how it was inspired by a Spanish gal, Lady Juana Maria Smith who loved having Cantaloupe for breakfast but her husband only ever wanted Bacon.
Legend has it that Cantaloupe soon became known as Spanish Bacon in this household, translated into Afrikaans as Spanspek. This beloved couple's really sweet love story can be read here.
I wonder if Lady Juana was perhaps a vegan at heart?

Once I started packing this Rubik Cube, there was no stopping to take pics in between, but it's quite simply a case of packing alternating fruit into 3 layers of 9 cubes.
I actually thought of aborting this when I first started forming the cube, but it did not look too shabby in the end ;)
Pomegranate and mint leaves finished it off nicely.

I could not waste all the off-cuts so it was a debate about whether to make a smoothie or to juice it all, but the smoothie won the day.

Fruit off-cuts and a little unsweetened Almond Milk all went into the blender.
My faithful old blender is due for a trade-in soon as it's showing some wear and tear in the base of the blender but still works like a bomb!

We really could do with cooler weather but not the extreme cold you're experiencing!
