My Scrumptious RAW VEGAN Noodle Recipe!

This is one of my current lunch favorites. I just throw it all in a bowl and viola! A delicious, healthy, raw vegan meal.

  • 1/4 onion sliced thin
  • Handful of grape tomatoes sliced in half or quarters
  • 1/3 avocado diced
  • 1 cucumber julienned (or cubed if you desire)
  • A bit of red cabbage sliced thin (I love colorful meals!)
  • Dash of curry
  • Dash of cumin
  • Generous amount of garlic powder
  • Juice of one lime
  • Generous portion of coconut aminos
  • Sprout garnish on the side (I used broccoli sprouts)

Place the cucumber noodles on the bottom and load it up with the rest. Enjoy!!
