Good afternoon my beloved steemians across the globe, it's already weekend and I guess you're all relaxing at home enjoying yourself, it's unfortunate that I am still at my work place as, because I work even on weekends, all the same it is well. It's an amazing thing for me to participate in this wonderful contest organized by our dear admin @mesola, I say a big thank you ma'am
Introduction
Today I will be writing about my meal, it's a very common meal in this part of my world, Akwa Ibom, Nigeria. There's this popular name we called it and this name really suit it so well but it also have a generally name which some people called it. The meal I cooked was MTN RICE but some people called it RED OIL RICE. So let me take you along the lane.

So I will start by listing down the ingredients that I used in cooking my concoction MTN rice.

- Rice
- Egg
- Pepper
- Onions
- Salt
- Scent leaf
- Red oil
- Crayfish
Method of preparation
I put the raw rice into the pot, put water in the quantity I wanted then I parboiled it for about 10 -15minutes. Then I removed it from the fire and pour into the sifter to wash it.

I put the empty pot on fire, then pour in the quantity of red oil that I want into the pot to heat, before then I have already pound the crayfish and also sliced the scent leaves and onions and set aside while the rice was on fire.

The red oil has heated for another 2 minutes then I pour in the sliced onions into the oil and fried it.

After frying the onions for 430seconds, then I added other ingredients, ranging from the pounded crayfish, Maggi, salt and pepper, stir it all together and allow it steam for about 2 minutes.

After the 2 minutes, and then pour in the parboiled rice into the pot and add little amount of water, stir it well and taste for salt.

After stiring it well, I washed the raw egg well and insert it into the bottom part of the pot of rice, so that it will cooked well, then I covered the pot so that it will cook very fast.

I allowed the rice to boil for about 20 -25 minutes, by then the water was drying off gradually, so I put the sliced scent leaves into the pot of rice.

After putting the scent leaves I covered the pot and allowed it to simmer for about 3 -5minutes, then I turned off the gas. My MTN rice is fully ready.

I dished out the portion I wanted to eat with my girls and sliced cucumber on top of it then we began eating it.
