Delicious and light mushroom soup
INGREDIENTS
400 gr fresh mushrooms
4 chopped green onions
2 small or 1 big chopped white onion
1 cup lucewarm milk
2 cups lucewarm water
1 1/2 tsp flour
4 tsp olive oil
salt
pepper
nutmeg
PRODEDURE
- Slice mushrooms.
- In a saucepan add the olive oil, the onions and the mushrooms and let them frizzle for about ten minutes at a low temperature.
- Then add the flour and stir well.
- Pour into the saucepan the milk and let the soup boil.
- After one minute add water, salt pepper and nutmeg and stir well.
- Let the soup boil about 5-10 minutes, depending on the desirable soup texture. If you like your soup creamy, let it boil more.
- Serve your soup at a deep bowl, ground some fresh pepper and enjoy!
Secrets and suggestions:
When your soup is ready, you can add some fresh parsley or dill. For a less lighter version, frizzle some bacon and croutons and add it at the top of your dish. Sprinkle with grinded parmesan and enjoy your meal!
