Steemit Iron Chef 2017 #16 : Avocado burritos, guacamole and avocado boats
So, this is @lindahas posting on my boyfriend's account. My password was misplaced and I am waiting for my account to be recovered. It has been 4 days at this point and we will see what happens. I guess, if I can not get my account back, I will have to take some time off as I put so much effort to build and now it feels all lost. What is a little weird is that support hasn't gotten back to me yet and I feel like I am talking to a wall, but I am hoping it is just because they are extra busy. I just want to know if there is anything that can be done at this point, though...
Meanwhile, I will once in a while use my boyfriends account to post for my competitions, but I doubt it will be anything more.

So this week the magic ingredient is avocado and I love those. So I created 3 very easy things that serve as perfect dinner dishes and complimented each other. I will show you how to make all of them and the fun part is, it is very easy and takes up no time whatsoever.
Avocados are something that will fill you up fast so there is no need to have much of them. One burrito, half of an avocado boat and you are ready to go. It is a very filling food, so if you are looking for good fats, buttery texture and loads of love, this is it!
It took me about an hour to make all of it and the food was enough for 4 to 5 people. So, here we go!
Ingredients
For burrito
1 and a half avocados
4 eggs
a tomato
a little bit of mozzarella cheese
salt and pepper
a little bit of cut up spring onions
half of a lime
ham
soft tortilla bread
For avocado boat
1 Avocado
tomato
olive oil
Mozzarella cheese
spring onions
Salt and pepper
For guacamole
1 and a half avocados
Half of a red onion
spring onions
1 tomato
Juice from half of a lime
Salt and pepper
Pepperoni pepper
So, as I said, everything is easy to do and you can simultaneously make everything, but I will start with the burritos just so we do not get lost.
First, beat the eggs in a bowl and whisk them, then add salt and pepper
Cut up the tomato and mozzarella into slices
Heat a pan, add oil, and pour the egg mixture in it, add the tomato, spring onions and mozzarella in it
Switch to low heat, add a top and leave for a couple of minutes
While the eggs are in the pan, put the avocados in a bowl
Add salt, lime juice, and pepper, then make into a puree
When the eggs are ready, take them out of the pan and put in a bowl
*** Now, lets do avocado boats as we need to step back from the burritos for a second. Two boats will easily fill four people, so do not make too much of them!***
Cut an avocado in half and take out the seed/bone, whatever you call it :D
Cut the tomato into small pieces and fill it where the seed was
Coat with oil, salt, pepper, and spring onions and cover with mozzarella slices
Heat the pan up again (the same one from before)
Put the avocado boats in the pan and fill up your soft tortilla pieces of bread with:
A spoon of avocado mixture, piece of ham and the egg mixture
Then fold the burrito shut and put it in the pan next to the avocado boats with the folded lines downwards
The burrito will get golden brown very fast so look after it, flip it when one side is ready
When your burritos are brown from both sides, take them off and put a top on the pan, leave the boats in it for two to five minutes
And it is as easy as that!
That is it on the warm food side, but we still have some guacamole left to make!
Take the rest of your leftover avocado and add in one more
Clean it out of its peel and put in a blender (or if you want to do it by hand, it will work just as well, if not better, for those chunk lovers)
Add half of the red onion and a pepperoni pepper as well as salt, pepper, tomato and lime juice
Cut up some spring onions and add them as well
Blend everything together
Aaaand, you are done with this as well!

It is now ready, the deed has been done. You have three avocado items that are each different and yummy in their own right. The guacamole can be left for later, on a bread, as a dip, anything you would like. I must admit that I dipped a little of my burrito in it, but as I ate more and more and got fuller and fuller, it was too much for me :D
