So yeah, I put sweet potato in cookies but it actually works. It's a great way to add natural sweetness and soft texture without a lot of junk. These cookies are perfect for sharing with a friend but they're also perfect for not sharing ;P

I often make them into pancakes. Sweet potatoes became the filling and then chocolate as the main dough
