I always work light to dark for watercolor. I try to squint my eyes to isolate where the lightest lights are and slowly open them until I can see what kind of transitions I should try for. Obviously with water it will get away from you and drying times/when to make use of damp paper will be an experiment and a challenge every time. But, it's a lot of fun and you can get really cool effects from the medium, I really enjoy working with them!
I post a video every couple days with a timelapse (usually a minute long). If you were looking to see how I go about layering give my blog a look through! You might glean some more out of it :)
