I have to say I do enjoy stouts with dark coconut roast as long as it fits well with the rest of the aroma profile and doesn't linger in the after taste. One good coconut stout I had was the Bombshell Dirty Secret Coconut Stout - http://www.bombshellbeer.com/Beer/Dirty-Secret-Stout-Coconut-Batch. If you haven't reviewed it yet its worth a look.
