Foodie's last minute snack

Good morning everyone, hope you're having a nice weekend.

My head's a little less cloudy today, though it still doesn't want to produce many words. It being morning might have something to do with that. I'll try anyway!

So last wednesday, we had dinner at my boyfriend's dad. There was so much left over, we decided to have dinner there again yesterday. About twenty minutes before we were supposed to have dinner, I posted a recipe online on my Wordpress blog.

Nutty lemon bars

Just looking at these pictures made me remember how tasty this little snack was, so in my head I started wondering if I had the ingredients here.

Turns out, I did! Except for the lemon, which plays a big part in the recipe. However, on our trip to Germany, my boyfriend's cousin bought a little bottle with lime juice. I figured 'that might come in handy!', so I bought one too. And boy did it come in handy yesterday!

So I quickly gathered all of the ingredients and started making this delicious little snack. I first set the coconut oil to melt in a hot water bath and then got the bottom of the snack ready. By the time my boyfriend told me we had to go, I was ready to pour the coconut layer on top of the bottom and put the whole thing in the fridge! What a quick snack, or what?

I cut it up after we got back home and now I have a yummy snack for whenever I want something sweet, sour and tasty this weekend! The lime juice is a good substitute, though I prefer the fresh lemon juice with zest, because you can just taste it better. Fresh lime juice with zest should work fine aswell.

We have no plans this weekend. We'll do groceries and play ESO I guess. I'm looking forward to it. Other than that, I can't wait to hear what the third party will price my dream house at. I want it to be high enough for us to get a mortgage, so I'm very anxiously awaiting the results. They should come in the first half of next week, but it still feels sooooo looooong. Ugh, we'll get there.
