is dukaan kee asalee jaan isake chhole (chane) hain. raat bhar bhigokar aur ek bade peetal ke bartan mein ubaale gae ye chane—jinhen dheemee aanch par sookhe anaar ke daane (anaaradaana), sookhee methee kee pattiyaan (kasooree methee) aur kuchh khaas masaalon ke mishran ke saath pakaaya jaata hai—ek gahara, shaanadaar rang aur gaadha, lazeez svaad pa lete hain. chhole ke oopar adarak ke lachchhe, katee huee haree mirch aur taaze dhaniye kee pattiyon kee gaarnish na keval isake svaad ko badhaatee hai, balki is dish ko dekhane mein bhee behad aakarshak banaatee hai. plaitar kee prastuti ek behatareen chhole-bhatoore plaitar mein sirf mukhy dish hee nahin hotee; isake saath parosee jaane vaalee any cheezen bhee aham bhoomika nibhaatee hain: * teekha achaar: gaajar, mirch ya aam se bana ek khatta-meetha aur chatapata achaar. * masaaledaar pyaaz: sirake mein bhigoe hue ya patale-patale kate hue pyaaz ke chhalle, jin par chaat masaala chhidaka hota hai. * haree chatanee: pudeene aur dhaniye se banee ek taazagee bharee chatanee, jo svaad ko santulit karane ka kaam karatee hai. * tale hue aaloo: kaee jagahon par, chhole ke saath masaaledaar tale hue aaloo bhee parose jaate hain.

The true soul of this shop lies in its Chole (chickpeas). Soaked overnight and boiled in a large brass vessel, these chickpeas—simmered over a slow flame with dried pomegranate seeds (anardana), dried fenugreek leaves (kasuri methi), and a blend of special spices—acquire a deep, magnificent hue and a rich, delectable flavor. A garnish of ginger slivers, chopped green chilies, and fresh coriander leaves atop the Chole not only enhances its taste but also makes the dish visually stunning.
Presentation of the Platter
An excellent Chole-Bhature platter consists of more than just the main dish; the accompaniments served alongside it also play a crucial role: A sweet-and-sour, zesty pickle made from carrots, chilies, or mangoes. Thinly sliced onion rings—often soaked in vinegar—sprinkled with chaat masala.
A refreshing chutney made from mint and coriander, which serves to balance the flavors. In many places, spicy fried potatoes are also served alongside the Chole.
