Thoughts on the Very Best Chocolate Chip Cookies..

I’d like to share my chocolate chip cookie recipe with everyone on Steemit, tweaked after 30 years of being a housewife, with hopes to start a discussion..

Quick, easy, and guaranteed to elevate you to baking queen status. I started with the basic Nestle’s Toll House recipe – great recipe but I found my cookies to be too cakelike and heavy. This recipe has less flour and baking soda which makes for a flatter, crisper cookie.

Preheat oven to 375 degrees, line cookie sheet with parchment paper, use paddle attachment on mixer

  • 1 ¾ cup of flour, ½ teaspoon baking soda, ½ teaspoon salt - Sift
  • 2 sticks of butter at room temperature
  • 1 cup light brown sugar and ½ cup white sugar
  • 2 teaspoons real vanilla, 2 eggs
  • 1 package Nestle’s Toll House chocolate chips, 12 oz, 1 package Heath Bar Toffee Bits, 12 oz

• Cream butter and sugars till creamy, medium to high speed..
• Mix in vanilla and eggs till just blended, low speed..
• Add dry ingredients, low speed or by hand and stir in chips & Heath Bar Toffee Bits.
• Drop by teaspoon full and gently flatten on cookie sheet.
• Bake for about 6 minutes – till just the edges are brown and the center is still soft

Note – the consistency of the butter is key. The butter should be soft but not liquid so don’t overzap your butter in the microwave to get it to room temperature. Also, do not beat your eggs in – you just want to slowly mix them in until you can’t see them anymore in the dough. And resist the urge to overbake, it’s a slightly hotter oven at 375 degrees so the cookies can burn easily. The cookies crisp up while cooling so take them out while they still look slightly uncooked in the middle.

I forgot to mention how important having a great chocolate chip cookie in your baking line up is to a baker. It's a tie with brownies - if you love to bake, you must make killer brownies. I'll share my recipe for the best brownies ever next.

I've made them for many years, to many moons to count now lol
Like to add cinnamon and nutmeg to them, never look at the
recipe, have made them so much. Sometimes lemon zest.
Not made any in awhile now and would often cut the recipe
in half as it's just the two of us.

Use to make many batches for Christmas giving.
Sometimes would split the full recipe into 3 or 4 parts
and add nuts to one, chips to another and peanut butter
to the last. Have a few different kinds out of one base batch.

Thanks for the comments. Christmas cookies are my passion and I love adding new things to recipes. I totally agree with you - add nuts, cinnamon --- mmmm -- whatever suits your mood.

I made a zucchini blueberry cake with lemon cream cheese frosting for Mother's Day yesterday. My family liked it but everyone was mad I didn't bring any brownies - another great standard that is easy to make your own by adding something interesting like espresso or chocolate liquor. I'll post my easy peasy sure to please brownie recipe next.

Also forgot to mention that these cookies are absolutely perfect for making chocolate chip ice cream sandwiches with. Try a scope of Chocolate Chocolate Chip ice cream and roll the edges of the cookie in mini choc chips before freezing. A chocoholic's dream.
