Everyone seems to be making pizza, so I thought that I would join in.

Here we go. My homemade pizza. Notice the far end has no cheese? This is because my husband will not eat cheese of any kind. Honestly, after 3 decades of marriage, he has sucked the life out of me.

I started by making some dough. I thought that a base of focaccia bread would be a good start.

The recipe for the dough is:

1 and 1/3rd cup warm water
1 pkg or two teaspoons of instant yeast
1 tsp sugar
3 and 1/2 cup of flour
1/4 cup of olive oil
1 teaspoon salt

stir the yeast and sugar into the warm water and let it stand for 10 minutes. Once foamy, gradually add oil, salt and flour. I use a stand mixture with a dough hook, but you can also knead the dough by hand. Place the kneaded dough in a greased bowl and over with a damp cloth. Let the dough rise in a warm place for 1 hour or more. It should double in size.

Once your dough has risen, remove from the bowl. You will now want to use a rolling pin to shape the dough into a pizza shell.

Once you have rolled out the dough into the shape that you want, you should let it rise again for 20 minutes or so. I have a "bread proof" setting in my oven, so I like to rise the dough in there. The temp is 95 degrees F.

While waiting for the second rise of the dough, I make the pizza sauce.

homemade pizza sauce is very easy to make. I took some tomatoes and peeled them. If you put the tomatoes in a bowl and then pour boiling water on them, the peels slide right off.

After chopping the tomatoes, I put them in a pan over medium heat. I added some onion, garlic, salt, pepper, Italian seasoning (oregano, marjoram etc), a bit of paprika, a teaspoon of sugar, and about 1/4 cup of olive oil.

I cooked the sauce down until it was thick. I deglazed the pan with a little red wine, which I think adds a nice flavour, but this is optional.

Sadly, I discovered that I did not really have much in the way of toppings. I sliced up a little more onion and found some ham in the fridge. I used a 'tex-mex' grated cheese that I had. I would have liked to put some peppers and mushrooms on it, or some pepperoni slices. At the very least, I would have liked to use some mozzarella. Even some pineapple would have gone well with the ham, but I didn't have anything on hand. This, after all, was just a pizza that I decided to bake late a night. Next time I will prepare in advance.

After my dough had risen the second time, I spread my pizza sauce on it. Then I added the ham, onion, and finally, the cheese.

I felt a bit sad putting this lousy lunch meat ham on my beautiful pizza dough, but here it is. Next time will be pepperoni.

I baked it in the oven at 400 degrees F for about 15 to 20 minutes. Notice how sad the cheeseless side looks. Husbands will be husbands.

I have a friend who didn't eat cheese either. And then after a trip to France and Italy, he started eating cheese!

I didn't eat cheese when I was a kid. We just never had cheese at home. I haven't even seen cheese in the store. At the institute, living in a dormitory, I saw that a guy I knew always ate cheese. I guess I've been eating it ever since. Once, in the hungry 90s, I was given cheese at work instead of money. It was a 3 kg head. My son and I ate it in a week. I gave a piece of cheese to a friend.

My husband is very spoilt. He grew up with more money than I did and it never crossed my mind not to eat what was served to me. He was able to pick and choose the foods he wanted to eat and his mother indulged him.
It is also difficult to force vegetables down his throat. If it is green then I can forget it.

I enjoy everything except I draw the line at liver, kidney, brains, eels, insects, and sheep's eyes. Please don't feed me those things. :-P

I honestly do not get why my husband hates cheese. It is so delicious! I can understand when people shy away from strong tasting cheeses such as blue cheese, but mild cheeses like mozzarella or cheddar are very tasty.

He will drink gallons of milk, but no milk products such as cheese, yogurt, sour cream. Except sweet whipped cream. He will eat bowls of that.

I will definitely tell him your cheese in lieu of wages story. He deserves to feel ashamed of his cheese rejection. :-P

I think that it is not necessary to tell this as an example. Men don't like this comparison :)

My wife and I were also not spoiled in terms of food.
But I love the liver, kidneys, brain, blood. But I definitely don't want to eat insects, worms and similar food. 😂

OH yeah, blood. I hate blood too. Blood sausage--yuck! The Finnish people make blood pancakes. I have eaten those, but not because I wanted to. :-P

Ahaha.... I love blood sausage. I'll say more. I've seen people drinking raw hot blood from a dead piglet. That's really disgusting!

ewww! I would say that is dangerous. Pigs carry parasites and bacteria that are very dangerous to humans.

Yes, thank you. There is oregano in the sauce, but not too much as my husband hates flavour. :-P

Most people that hate liver haven't had it cooked right. Overcooked it tastes like old shoe leather! Cooked slow with a Lot of onions, it's moist, tender, and tasty. I don't eat beets (tastes like dirt), and haven't eaten bugs lately (since survival training); but most everything else is ok.

Have you tried Harvard beets? The sweet and sour beet recipe? It used to come in a can.

This far, every beet preparation I've found, including juicing; tastes like dirt.

98% of cooks don't know how to cook it, so it's Real Real Bad! It's supposed to have a full onion for every piece of liver, then cover and cook slow.

Hee! It is not the way it is cooked for me. It is the substance itself. I don't want to eat an organ that filters blood wastes. Yuck. Plus, it tastes nasty. :-P

I don't eat it often, but I do enjoy it from time to time! The onions and the gravy on mashed potatoes, is a thing of beauty too.

BTW, it will freeze here 3 weeks early...did you send it? 😁😳 It will reach a record low tomorrow of 26 degrees F! It could be a hard winter....

We are having a long Autumn with temps above freezing. This is unusual for us. I saw the Farmer's Almanac claims a warm October means an extra cold February.
