Jerusalem Artichoke - Helianthus tuberosus


Red skinned Jerusalem Artichokes are an extremely easy tuber to grow. They spread like wildfire and produce large quantities per planting. I planted 3 of them that we had received in a produce box a few years back and wasn't fully aware of how aggressive they are. This is the harvest from just 3 planted artichokes so you can see the dramatic increase.

Last year I cut back the planting to what I could find, but there were still little seed pieces left and the planting blew up again this year. I made the mistake of planting them in my main garden space so I have been trying to relocate them, to little avail for the past 2 years. The Sunchoke needs to be planted similar to Hops in that you should have a barrier sunk into the soil to discourage the invasive spread.

Great garden addition and they will produce forever! But they will take over a garden no matter how you try and control it. Great photo and wonderful color!

The only way I know of to contain them in ground is to sink sheet metal pieces about a foot deep all around the patch. Kind of like making a gopher barrier.

I have been toying with some mass plantings as a screen during summer. They get tall enough it could be worth it if they are planted thick enough. You will love them!

Enjoyed reading this. I've been looking for some sunchokes but they're about $25/lb. wondering if I can find some this fall at Whole Foods. I guess if just three can give that large a yield it might be worth it. Wish I had a neighbor that grew them.

You can find them in the stores for sure, and probably organic ones at wholefoods. It only takes a few but if you want to get a substantial harvest then probably best to plant 10 or 20 or more.

yep. best boiled in my opinion, but they can be baked and chipped with varying degrees of success.
