Soup Season Has Arrived -- One of My Veggie SoupssteemCreated with Sketch.

The cooler temperatures of fall have arrived and with the harvest pretty much complete, root vegetables are pretty cheap to buy. I love root vegetables for making soup.

This picture is the last serving of a soup I made yesterday. It has been my practice most of my adult life to make a lot of soups in the fall and winter. Often they are my main meals so, I like them to be thick and rich.

My recipes for them are pretty freewheeling. I don’t like to be locked into ingredients or measuring when I make soup. That means I rarely have the same soup taste the same twice but, it does make for variety.

For this soup, I used:

— 2 potatoes
— 1 sweet potato
— 2 carrots
— 1/2 of a large turnip (rutabaga)
— 2 onions

I peeled and sliced up the vegetables into a sauce pan. Added about a tablespoon of chicken bouillon base and filled the pan with water. I left it to simmer until the veggies were very soft. Then I mashed the veggies before pureeing them with a hand wand.

I then added:

— about 1/2 cup of cream
— 2 tbsp butter
— garlic
— pepper
— turmeric

The spices are to taste. Everyone likes a different level of spice or even different spices. Do what you like. Notice I didn’t add any salt? While I don’t cut salt out completely, I am very careful about the amount of salt I use in my food. The bouillon I use has salt in it, so I don’t add any additional.

I let the soup simmer for about thirty minutes before I took my first serving to let the seasonings work their magic.

Then I noticed that I’d used more water than I probably should have as I wanted a nice thick soup after I pureed it. I mixed up a bit of flour and water to thicken it up. Use whatever works for you if you need to thicken.

This sounds really good! We had those exact same soup cups when I was a kid, they were pretty cute. I'll have to try out your recipe.

Oooh this looks yummy. I usually make veggie soups for myself or turkey soup for hubby but it's usually very chunky. This looks great and the ingredients sound yummy. I will definitely be trying this.

Chunky soups or stoup (thick soup) are good as well, especially when I put meat in them. Root soups seem to just lend themselves to puree to bring the flavours together.

It looks rather tasty.

I love soups. All kinds, from barley to hearty beef infused medleys. There really isn't anything like sipping on a steaming bowl of soup, preferably looking out the window at snow covered hills.

Just curious, one of your story tags was "unmentionable", wondering what that category meant.

I think that is one of the reasons I have such a fondness for soup in the cold weather. It is simple and easy but so nutritious and tasty on those cold winter days. When the soup is homemade. To me, commercial soups just don't measure up.

well, like i said.. my soup recipes are pretty freewheeling so you can go without the cream in the creaminess :)

Home made soup can be literally incredible, I have done it before myself and the the little effort you put in is really worth it. This is a really good recipe and guide for a tasty soup - try it honestly you will be amazed, and you can upscale and store the excess the ingredients are super cheap - it's a win win.

yes especially with the harvest veggies being in right now. I spent less than 10 bucks on 35lbs of root vegetables. The added ingredients are just pennies in cost.

I'll have to try this, but have to leave out the carrots. Unfortunately, my wife isn't a fan of carrots.

you can just leave them out or replace them with something else... i have a butternut squash sitting on the counter that was under consideration for inclusion but decided to leave it for another day.

That my #thealliance friend is close to what we call in Scotland Neeps and Tatties - part of my staple diet when I was growing up! I love it! However, we did not add sweet potatoes. I have to try that. Tatties are potatoes and Neeps are Rutabagas! Great photography too!

i have a love for sweet potatoes. When I was growing up we only ever had them baked but I have found that I can cook them as many ways as regular potatoes which increases my fondness for them. Neeps... I like that :)

You now know a word from my old Scottish language - The Doric! The word originates from both Latin and Old English. :-)

I would have to add some kind of meat.

LOL I love my meat too but have found that I can enjoy a root vegetable soup with or without meat. Ham or a nice farmer's sausage would make a nice meat addition I think. How's that work for you? Told you my recipes are freewheeling

I'm similar. Ham usually the go to. Course I hunt a lot so there's venison this time of year and sometimes squirrel or rabbit. My stews are relatively alike in taste as I always add carrots onion and tatos.

never been a fan of venison .. but i know a lot of people are. Sounds like you got the meat under control :)

I'm having one of those days where I just get hungrier and hungrier the longer I browse Steemit.

I really hate cooking, myself, but I think I might cook up a few huge batches of soup so that I can freeze them into blocks and have easy meals for later.

that is one of the great things about soup, or stew or chili is you can freeze for later use. I tend to like making small batches that last about a day so I can have variety.
