SLC-S28/W1-"Local Taste, Global Twist| Breakfast!
Greetings great people. Glad to be here as a part of this amazing challenge on creative breakfast. Here’s my challenge presentation.
Share your before-and-after dish (original + global twist) you can add the processes and give the name and origin of your local breakfast.
For this challenge, I reinvented a local breakfast which Nigerians love and is common to all. Our popular Nigerian pancake served with a cup of warm beverage. It one of our numerous breakfast that feels like home when we we eat it, soft, thin and sweet depending on how it’s spiced.
Bit instead of making this regular breakfast the way we usually do, I decided to give it a creative touch and a global expression. So I transformed it to a beautiful breakfast inspired by Mexican street food.
Behold my Naija Pancake tacos filled with water melon salsa
Let’s see the procedure and the ingredients I used:

- Flour
- Milk
- Sugar

- Watermelon
- Powdered red pepper
- White vinegar
- Honey
Procedure
- I put the flour, sugar and powdered milk into a bowl plate and mixed together.
- I broke the egg into another plate and added water to it and stirred and then mixed the entire pancake mixture.
- I proceeded to fry my pancake in a pan. I ensured it was thin to give me the tacos feel. Soonest the pancake was ready.

Preparing the watermelon salsa
- I sliced the water melon into tiny bits. I added white vinegar to it to give it an acidic tangy taste.
- I sprinkled red chilli pepper to keep it proudly Nigerian
- I proceeded to add honey for a sweet wrap.
- I folded the pancakes like tacos and topped it up with the water melon salsa. And served with a warm cup of beverage.

What global element or idea did you add to give it a twist?/How did the new version taste or look compared to the original?
To global element I used to give my pancakes a twist was adding white Vinegar to it. It gave it a global acidic tang that is usually found in international dishes. The pepper kept it proudly Nigerian while the honey added a wrapping sweetness to it.
For the taste and appearance, my reinvented breakfast looked liked Mexican tacos but made with soft Naija panacakes. The watermelon added a touch of coolness and freshness to it. The taste was totally out of this world. A bite of the tacos was like a perfect blend of sweetness, tangyness and that spicy feeling all in one bite. It was hitting different sides of the taste buds and giving a burst of tasty discovery different from the normal pancake.
What inspired your creativity in this dish?
My creativity in this dish was that I wanted to recreate something that it’s familiar yet adventurous. Something that we can simply make at home and yet can be showcased globally. Turning the pancakes into tacos and pairing them with the watermelon salsa inspired by mexican cuisine gave me the perfect blend of local dish with a global twist needed.
I used water melon because I wanted it colour and alluring. Any fruit of one’s choice can actually be used as deemed fit for making the salsa.
