I really like this your method (coating the plantain before roasting). Mine usually burn when using ripe one and I will have to spend time peeling the burnt part. I will definitely try this out. Can I use vegetable oil to coat instead palm oil?

Yes you can coat with vegetable oil instead of palm oil. Also note that there is need to wrap with aluminum foil. My foil is finished and I couldn't get another one. So I did it without wrapping.. Guess what? This is the first time am doing it without wrapping and it came out clean.
Wow! I will try with foil because sometimes the burnt parts usually give a bitter taste if not peeled off properly. Thank you so much sis!🤗
