CHICKPEA CUTLETS - VEGETARIAN - VIDEO

These crispy breaded chickpea cutlets are absolutely delicious! Chickpeas have the perfect flavor and texture for this meal that'll win over anybody. Serve this alongside some fresh greens or any vegetable of your choosing.A combination of chickpeas, spices and greens formed into savory cutlets, it's perfect for when you want something "meaty". Enjoy!

Ingredients :
1 can of drained chickpeas ( about 250 gr OR 1 cup)
Grated cheese ( as much as you like, i used about 50 gr)
Breadcrumbs
1 egg
2-3 tbsp of lemon juice
2 tbsp of plain flour
Fresh coriander
Fresh Mint
Fresh Parsley
Fresh Dill
Olive oil 2 tbsp
Pinch of cumin
Pinch of cinnamon
Pinch of salt and pepper

Directions:
Step 1 : Into your food processor add your drained chickpeas. Then add all your spices and all your greens. Pulse few times, we want to keep the texture of the chickpeas.
Step 2 : Place your mixture into a bowl, add 1 egg, lemon juice, cheese and flour. Mix everything together.
Step 3 : Take about 1 tbsp of the mixture, roll into a patty and dip into breadcrumbs from both sides. Make sure your hands are a bit wet so the mixture doesn't stick to them. I usually prepare a bowl with water and a plate with breadcrumbs.
Step 4 : Cook your chickpea cutlets for about 5 min on each side until they are nice and golden. Enjoy with salad, on their own or with sour cream.

I'm no vegetarian, but that looks and sound very tasty :) However, is it not the same as falafel with a twist, basically?

The dish really looks amazing and I'm sure that it is tastier than it appears, keep up the good work and make us eat more tasty food.
Also Eggs are considered as Non Vegeterian in few Asian countries and while most of the countries consider it as Vegeterian.

It looks so yummy. Definitely will try. Do you think I can leave the cheese out? Or substitute for some vegan cheese?
