Today’s post (and recipe) is dedicated as the title says to; "Comco’s Tres Leches"..

La Comcowas one of my husband's aunts, and as a good Venezuelan (from the Zulia) she was a loud, rowdy, know-it-all, but above all, she was funny and real.

Her desserts were the family's favorite and in her house there was always one or two in the fridge. Among the most anticipated by all were; the "Chocolate Cake" (which was exquisite), also the "Black Cake" (one of the best I've ever tasted) and last but not least, her quesillos (singularly wonderful).

I am fortunate to have all those recipes that she shared with me and with her particular explanation included, which makes that today, when I’m preparing some of them, I smile remembering all the beautiful and funny moments we shared together, such as the day that I did not understand a detail of her explanation, so she shouted: "Stupid Gallega!".

These things are what made her someone very special and truly unforgettable.

Today I decided to bring her "Tres Leches", because it was the last recipe she gave me. I remember clearly that it was through a video call, and she took all the time to give me the best explanation and all the tips so that my dessert could be perfect. And it was amazing (her energy and determination to help me) because she wasn’t going through her best moment at that time, since she had recently lost her life partner, something that made her very sad, and sadly not knowing that she would accompany him in a very short time, leaving all of us who had the pleasure of knowing her, an empty space impossible to fill...

...and that is why today I wanted to pay tribute to her with one of her many wonderful recipes!

Now her recipe!

Comco’s Tres Leches.



Ingredients:

• 6 eggs
• 2 cups of sugar
• 2 cups flour
• 1 cup of milk
• 1 small spoonful of vanilla
• 1 small spoonful of baking powder


Preparation:

You must mount the whites to the point of snow. Then gradually add the sugar and go well beating. Then add the egg, one by one, and beat well before adding the next. Then add the previously sieved flour and baking powder. Finally we add milk.

Place it in a greased and floured mold (preferably rectangular or square) and bake at 350 ° C for approximately 25 minutes.

Cream:

• 1 can of large condensed milk
• 1 cup of South Cream
• 3 eggs
• 1 can of evaporated milk

Mix all the ingredients well in the blender, and add only the eggs. When the cake comes out of the oven, you should prick it and bathe it little by little, until the cream is finished. With the egg whites you should make a meringue and cover the cake with peaks.

Take it to the fridge and done!
