My Vegan Italian Struffoli
Ingredients for 8 people:
250 g flour,
75 g brown or white sugar,
25 g of soya oil or corn oil,
1 small spoon of baking powder,
grated rind of 1 lemon,
2 tablespoons lemon liqueur,
2 tablespoons cornstarch,
a pinch of salt,
a teaspoon of turmeric,
maple syrup ,
oil for frying the mini balls
Instructions :
Mix the flour, sugar, yeast, cornstarch, lemon zest, orange zest, turmeric, salt and oil.
Add the lemon liqueur and two tablespoons of hot water.
Mix the ingredients and make a smooth and soft dough.
Leave to rest for 30 minutes.
Take a piece of dough and roll it under your hands until it forms a thin snake.
With a knife, cut the roll into pieces of about 1 cm and place on a tray.
Fry the struffoli in very hot oil until golden.
Drain on absorbent paper and in a saucepan with maple syrup.
