SQUASH SOUP, GRILLED BACON AND CANTAL CUBES
Squash soup is mandatory in an autumn-winter recipe directory! This one will delight the whole family, easy.
INGREDIENTS FOR 4 PEOPLE :
6 slices pork belly
300 g carrot
1 clove garlic
1 onion
200 g sweet potato
1.2 kg pumpkin
4 g curry powder
130 g cantal cheese
50 ml olive oil
pepper
salt
THE RECIPE
1 Spatula 1 knife, 1 cutting board
Peel and slice the onion.
Clean the squash well, cut it, remove the seeds and the stringy parts then cut into 3-4 cm cubes (no need to peel).
Do the same for sweet potatoes and carrots.
Heat 2 tablespoons of oil in an all or casserole dish and cook onion 7-8 min with a pinch of salt over medium heat until transparent.
Add squash, potato and carrot cubes.
Stir well for one minute,
Add the peeled and finely grated garlic and spices.
Cover vegetables with 1.2 litres of water,
Season with salt and pepper,
Cook 25 minutes over medium heat.
Mix or grind.
Cut Cantal into cubes
Grill bacon in a skillet over medium heat.
Cut it into strips.
Serve soup on Cantal cubes topped with bacon strips.
