Tonights dinner was delicous!!!

Tonight's menu consisted of:

-Roasted all natural boneless skinless chicken thighs
-Sauteed rock shrimp in butter and garlic
-Caramelized carrots with BBQ rub
-Fresh Avocado with olive oil and pepper

Ingredients:

Salt n pepper
Paprika
Roasted garlic and herbs
Lemon pepper seasoning
Cactus dust BBQ rub
1 fresh lemon
Olive oil
1/2 stick of unsalted butter
1 lb. boneless skinless thighs
1/2 lb of rock shrimp
1 bag of fresh carrots
1 avocado

Directions:

Preheat oven to 350 on conventional roast mode. This really helps with locking in the flavors and charring the chicken and carrots.

Season thighs with garlic and herb seasoning and roast @350 for 25 minutes.

Season rock shrimp lightly with lemon and herb seasoning and a dash of salt.
preheat skillet to medium heat with a 1/2 stick of butter in the pan, lightly saute the shrimp. Only taking a minute to cook, squeeze a lemon on top for finishing flavor.

Lastly, slice up the carrots in stir fry like strips and saute in a pan with olive oil on the stove top until golden brown, then add BBQ seasoning to them and finish them in the oven on roast mode to get a perfect crunchy crisp. This is by far the best way to eat carrots hands down, if you never tried them this way, they taste like sweet potato fries but better.

Dice up avocado and season to liking. A dash of parsley and paprika for looks. Thanks guys IMG_3157.JPG
