Texture is a big deal with gluten free stuff. We use a mix of almond meal and rice flour here because it yields a tender pancake that's almost indistinguishable from traditional! And it's a nice option for anyone who doesn't feel like having wheat.

Very cool. I just told my wife to give you a follow. She's into this stuff. Especially with our 2 year old son having lots of food allergies.
