Breakfast in Thailand! What you didn’t know you wanted to about hotly debated topic of FISH SAUCE

I guess this could also be lunch, or even a brunch. However for the locals, I’m not sure they’re fussed what time of day they eat these awesome noodles! Still, it’s a typical Thai breakfast ... found across asia in variations.

First, the dish untouched and on my table quick as anything after ordering:

Here we have: heaped pile of goodies like cilantro, ginger, bean sprouts et al; and of course generous sandwich worth of delicious tasty lean roast pork, and a bit more besides. everything is tossed quickly in the roiling hot broth, a process you need to see with your eyes before elegantly being scooped into the finished bowl seen above.

Now comes some customisation ...

On every dining table and restaurant throughout Thailand you will see variations of the 4 condiments. In the West, we have Salt pepper / SPG and ketchup or Tabasco.

Here we have - Sweet, Spicey Hot, Sour, and the other one I can never remember - which is often oversimplified as “Salty”, but we are in Ummagumma Country so it’s not quite accurate. Bare with me, I’m going food nerd a moment ... Umami which is basically the mystical 5th flavour discovered in Japan and you’ll know it when you experience it. It’s not salty, it’s the “fifth” taste sense after salty, sour, sweet, and spicey hot. Oysters have it, try sea urchin tho for ultimate umami mind blown.

Back to the point - in Thailand, 4 flavours to season food to your personal taste are added to the table, along with all Thai dishes basically being based on the same.

  • sweet (Thais love sugar)
  • spicey hot (Thais love for sugar is only slightly outstripped by love for insanely hot food
  • Sour (those pickled green chillis)
  • Fish Sauce!!! It’s somewhere bang in the middle but not umami and not salty!!!
