POTATO MUD CAKE
Material:
250 g steamed potatoes (weighed after steaming)
1 egg
100 g sugar (may be added if you like it very sweet)
A pinch of salt
300 ml coconut milk
150 g of flour
60 g of liquid margarine
2 drops of egg yolk coloring to make the cake beautiful (skip it)
Way:
Flour sifter. Set aside
Puree steamed potatoes, so it is more practical to be blended directly with coconut milk, sugar and salt until smooth. Put in the egg and turn for a while until it's mixed evenly
Pour into flour, stir with the help of a whisker until it becomes a smooth and soft dough. Put liquid margarine. Stir well.
If without a blender, beat the eggs, sugar and salt with a whisker enough until the sugar does not dissolve until it expands. Put the mashed potatoes, flour and coconut milk a little semi-little while stirring until smooth and soft. Finally add the liquid margarine. Stir well.
Heat the mold. Pour batter. Close. Cook on low heat until half cooked. Give toppings (can be raisins, chocochips, cheese pieces etc.). Cover again and cook until cooked
