How to prepare my Special Lumpiang Sariwa/Fresh Spring Roll (#003 @choyskitchen)


Filling ingredients
½ kl pork, minced
1/2 kl shrimp, shelled and deveined
1 head garlic, minced
250 grams carrots, julienned
400 grams sweet potato
2 cups sweet potato, julienned
700 grams singkamas (jicama), julienned
700 grams cabbage, shredded
300 grams lettuce leaves, shredded
11 pieces whole lettuce leaves
2 pcs Knor pork cubes
1 1/4 teaspoon ground black pepper
2 1/2 teaspoon salt
50 grams peanut, pounded
30 grams kinchay, chopped

Sauce ingredients
9 cup water
1/2 cup flour (diluted in 1/2 cup of water)
1 tablespoon soy sauce
400 grams peanut butter
1/4 kilo turbinado sugar (light brown)
3 heads garlic, minced
50 grams peanut, pounded

Wrapper ingredients
1 1/2 cup all-purpose flour
2 cups Nestle fresh milk
4 pieces raw eggs
½ teaspoon salt
2 teaspoon butter

Directions

  1. Cook the ingredients for the filling by heating a pan. Saute the pork then add 1 teaspoon of salt and cook until slightly golden brown then set aside. In another pan, saute the shrimp then add 1 teaspoon of salt and cook until the shrimps' color turn in to light pink then set aside .
  2. In another pan, pour-in the cooking oil then sauté the garlic and onions. Add the carrots, then sweet potato, singkamas, cabbage, lettuce leaves. Put-in the Knor pork cubes, ground black pepper, salt, kinchay and cook for 25-30 minutes.
  3. Mix the sauted pork and shrimps. Set aside.
  4. Make the wrapper by mixing 2 cups of fresh milk, 1 1/2 cup all-purpose, 4 eggs, 1/2 teaspoon salt in a blender and blend for 7 minutes.
  5. Turn the stove on to medium heat and put the non-stick pan in place. Grease the pan with butter. Pour-in the wrapper mixture (about half a cup) and tilt the pan to distribute the liquid evenly.
  6. Cook until the top part of the mixture is dry (about 5 minutes). Using a spatula, remove the cooked mixture and place in a flat plate. Set aside.
  7. Make the sauce by pouring the 9 cups of water in a sauce pan. Bring to a boil. 8.
    Add the 400 grams of peanut butter the diluted flour.
  8. Add 1 tablespoon of soy sauce, then the turbinado sugar and bring to boil for 20 minutes or until the desired thickness of the sauce is achieved. Set aside.
  9. Mix the minced garlic and 50 grams pounded peanut.
  10. Wrap the filling by placing the wrapper on a plate then place a lettuce leaf on the middle top part of the wrapper. Spoon desired amount of filling and place in the middle of the wrapper (over the lettuce leaf). Close the wrapper by folding the lower part first then roll the sides until the filling is sealed.
  11. Pour the sauce over the Lumpiang Sariwa and garnish with pounded peanuts and minced garlic.
  12. Can serve 11 pax. Share and Enjoy!
