Ingredients:
• 1 big zucchini
• ground beef 250gr ( if you don’t like beef, use chicken)
• 250 gr of rice ( the best option is brown rice )
• 1 onion
• 1 big tomato or 2 small tomatoes
• Fresh cilantro or parsley
• Dry black pepper and coriander, salt
• Natural yogurt
• Natural tomato paste or make it yourself (1-2 tomato)
First, wash big zucchini and cut in into big pieces. Then make a hole in the center.
Now let’s prepare stuff for filling. Chop 1-2 tomatoes, cilantro or parsley, onion. Add 250 grams of rice.
Weight 250 grams of ground beef ( or chicken) and mix it together with tomatoes, cilantro, rice, and onion.
Put our zucchini in a baking dish and fill in the holes with our filling.
Then let's prepare the sauce. I prefer to make tomato paste myself. I just take 2 tomatoes, smash it in a blender, put some pepper and salt.
Mix the tomato paste with 2 spoons of natural yogurt. Then put some cold water and mix everything and try to make it smooth.
Preheat the oven to 180 degrees. Put all the liquid around the zucchinis. It should not cover it completely. Then put the dish in the oven for 30 minutes.
You super tender and delicious zucchini circles are ready.
