Healthy salmon with sautéed vegetables and avocado hummus
If you like fish, salmon is always a safe bet. This time we will accompany the fish with sautéed vegetables and avocado hummus.
I love hummus. So I made my own version of hummus with avocado. Hummus is a chickpea puree with lemon drops, it is an Arab dish that is commonly accompanied with pita bread. This time we will slightly modify the original recipe.
Ingredients (four people)
- For the fish
- 4 slices of salmon
- 1 piece of broccoli
- 2 carrots
- 1 eggplant
- Sesame seeds
- Salt, black pepper, fresh parsley and a clove of garlic
- For the hummus
- 250 grams of cooked chickpeas
- 1/2 lemon
- 1 avocado
- Salt, ground cumin, black pepper and a clove of garlic
Cooking Time
Around thirty minutes.
Recipe preparation
Let's start with the humus! To do so:
- Fry the clove of garlic in a pan.
- Wash the chickpeas in cold water and crush all the ingredients in a blender for 2/3 minutes (chickpeas, avocado, 1/2 lemon juice, fried garlic, a pinch of ground cumin, pepper, salt and olive oil).
Special tip. If you have time, peel the chickpeas. The hummus will be softer.
It's ready! You can decorate the hummus with chickpeas, fresh parsley and olive oil, and you can present it with toasted bread and a few pieces of carrot, as in the following image. It's a very healthy way to eat hummus!
Next, let's cook the vegetables. First, we'll start with the eggplant. Cut the eggplant into slices, place it on a plate and add salt. To remove the bitterness, leave the eggplant at rest for 5 minutes. Then, the eggplant will release water. After 5 minutes, clean the eggplant slices removing excess water with paper towels, and this will remove the bitterness of the vegetable.
Cut all the vegetables into strips (carrots, broccoli and eggplant).
In a hot pan add olive oil, fry the garlic and then add the vegetables. Sauté the vegetables for a few minutes, until they are done.
After, and to finish the dish, we will cook the fish. To do so, in a hot pan, add olive oil. Add salt, pepper, parsley and sesame seeds to the fish on both sides.
Choose the doneness that you like most for the salmon. If you like little done with 3 minutes per side is enough. If you like it well done, cook it 5 minutes on each side.
When ready, serve it accompanied with the hummus. You can accompany it also with tartar sauce. And, most important of all… enjoy it! Bon appétit!
