How to make Bulgarian Banitsa.

Ok one of the things I have come to love over here in Bulgaria is their famous Banitsa.
I cannot really compare it to anything in the uk, except maybe a little like what we call a pasty.
This little slice of heaven is enough for you to eat any time of the day whether its morning or afternoon or evening.
Made with filo pastry, yoghurt, cheese and butter this is not a difficult dish to make. There are many different variations in which to make this, but I have tried this recipe and it is amazing.
I found this recipe here but adapted it by using yoghurt instead of milk as Bulgarians do favour yoghurt a lot.

1 cup of Natural yoghurt.
3/4 cup of melted butter.
1/2 teaspoon of salt.
3 large eggs.
2 cups of feta cheese or soft cheese (goats cheese could work too.)
16 Sheets of Phyllo Pastry.
Method.
Preheat your oven to 200 C and take a rectangular pyrex dish and brush the sides and the bottom with butter.
Mix the Salt, Cheese, Yoghurt and Eggs combine and mix well in the bowl.
Then take 5 sheets of the Phyllo Pastry and put on the bottom of the dish and brush with the melted butter.
Pour over the pastry a little of the yoghurt mix until the sheet is covered.
Top of with another three sheets, and repeat the process until you are left with sheets at the top.
The link said not to put butter on the top because the top goes too crispy, so I found a little bit of milk on the top helps and stops
the pastry from curling.
Put in the oven and bake for around 30 minutes until the top is golden brown and remove.
Once removed set aside to cool, then cut into pieces, serve and enjoy.
Note
If using Feta Cheese this is naturally salt so go easy on the salt otherwise it will be too salty.
This is a very rich dish and yes of course its screaming fatty but a little bit of naughtiness is good once in a while right??
