My take on Wasabi Lime Salmon (Recipe and Photoshoot)

I gave it my best shot and I'm happy with the results :D. My take on wasabi lime salmon. It was awesome! Here is the recipe:

Ingredients:
1 veggie stock concentrate
1 tbsp soy sauce
2 tbsp olive oil
1/2 jasmine rice
2 baby bok choy
2 scallions
1 lime
1 thumb ginger
2 cloves garlic
2tbsp mayonnaise
1tsp wasabi paste
12 oz salmon

#1 Cook Rice
Bring 3/4 cup water, stock concentrate, and soy sauce to a boil in a small pot. Once boiling, add rice, cover, on low heat. cook until tender, 15-20 minutes. Remove from heat keep covered.

#2 Prep
Cut off and discard root ends of bok choy, then separate into individual stalks. Thinly slice scallions, keeping greens and whites separate. Halve lime. Cut one half into wedges. Peel, then finely grate ginger. Grate garlic.

#3 Dressing
Combine mayonnaise, a squeeze of lime juice, a pinch of garlic, a pinch of ginger, and wasabi paste in a bowl. Stir in 2 tsp of water. Season with salt and pepper.

#4 Cook Bok Choy
Heat olive oil over medium heat in a large pan. Add remaining garlic, ginger, and scallion whites. Toss until softened,1-2 minutes. Add bok choy and 1tbsp water. Toss until leaves wilt, 2-3 minutes. Season with salt and pepper. Remove set aside and put in aluminum foil to keep warm.

#5 Cook Salmon
Heat olive oil over over medium-high heat. Season Salmon with salt and pepper. Add to pan skin down, cook 5-6 minutes. Lower heat to medium flip salmon, cook 3-4 minutes.

#6 Plate and Serve
Divide rice between plates. Top with salmon and bok choy. Drizzle dressing and garning with scallion greens. Serve with lime wedges.
