### Kadai Paneer Recipe
#### Ingredients:
- Paneer - 250 grams (cubed)
- Bell pepper (capsicum) - 1 (cubed)
- Onion - 2 (cut into large chunks)
- Tomatoes - 2 (pureed)
- Green chilies - 2 (finely chopped)
- Ginger-garlic paste - 1 tablespoon
- Coriander powder - 1 teaspoon
- Cumin seeds - 1 teaspoon
- Garam masala - 1/2 teaspoon
- Red chili powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Kasuri methi (dried fenugreek leaves) - 1 teaspoon
- Oil - 2 tablespoons
- Salt - to taste
- Fresh coriander leaves - for garnish
#### Method:
1. **Prepare the Paneer**:
- Lightly fry the paneer cubes in a little oil until they turn golden brown. Remove and set aside.
2. **Prepare the Vegetables**:
- In the same pan, add a bit more oil if needed, and sauté the cubed onions and bell peppers for 2-3 minutes on medium heat. They should remain slightly crunchy. Remove and set aside.
3. **Make the Masala**:
- In the same pan, add some oil and heat it. Add cumin seeds and let them splutter.
- Add the ginger-garlic paste and sauté until golden brown.
4. **Add Tomatoes**:
- Add the chopped green chilies and tomato puree. Cook until the oil starts to separate from the tomato mixture.
5. **Add Spices**:
- Add coriander powder, red chili powder, turmeric powder, and salt. Mix well and cook for 2-3 minutes.
6. **Combine Everything**:
- Add the sautéed onions and bell peppers back into the pan. Mix well.
- Add the fried paneer cubes and mix gently.
- Sprinkle garam masala and kasuri methi. Stir well and let it cook for another 5-7 minutes on low heat so that the paneer absorbs the flavors.
7. **Garnish and Serve**:
- Garnish with fresh coriander leaves.
Kadai Paneer is now ready to be served. Enjoy it hot with naan, roti, or rice.
