Apple Cinnamon Cake - 12 October 2025

I’ve been looking for good (and fast) ways to make use of apples. I’ve come across many recipes and the other day I wrote about one here.
This time I tried a new to me recipe but as I didn’t have a loaf mold I used a tray cake tin which was slightly wider and shallower. As a result I didn’t have enough of the previously stewed apple to put on top.
The photo above shows you the finished apple cake - I forgot to take process photos. The photo below shows a small slice I cut for myself to taste it. It was a very nice tasting cake.

When I make this recipe again I will cut the apples into smaller pieces so they look a bit neater when the cake is sliced. I will also add more of the cinnamon sugar as I only mixed half the amount. Still it was a nice recipe well worth repeating.

I’d never seen a recipe that includes the butter and also adds a bit of oil to make the mixture softer and lighter. You can see the finished cake has a softer crumb than the one I baked. I'm still happy with the result though.
