Apple Traybake - 3 October 2025

As per usual I forgot to take more process photos of this apple cake. I managed to take a photo of the mixture just before I added the apple slices.

Next time I will slice the apples more thinly.
After adding the slices of apple I sprinkled a mixture of 1tbs of caster sugar and 1 tsp of cinnamon powder which you can see above.

After baking for 35 minutes at 170 Celsius in the fan oven it came out like this. The holes you can see were made by me checking whether or not the mixture was well baked.
As this was a ‘traybake’ it didn’t rise a lot. I did find it a bit dry but that was okay with a bit of custard. As the weather has been a bit autumnal over here this cake didn’t last long and in fact I also failed to take more photos of it when cut into slices.
I made the cake mixture with :
150 of plain flour
1 tsp of baking powder
90 g of sugar
90 g of butter
2 eggs
2 tbs of milk
I creamed the butter and sugar with an electric whisk. I then added and whisked the eggs into that. I mixed in the sieved flour and baking powder. As it was a bit dry I added 2 tbs of milk. I then poured the mixture into a baking tray and then sliced three small (ish) apples and arranged them roughly into three rows.
Having been inundated by You Tube tutorial videos on how to bake with apples, I thought next time I’ll just try the recipe below because the resulting dough looks softer after adding 100m of milk :
The recipe would certainly produced a more spongy base because it has one more egg and more milk. I'm keen to try this one next.
As this year the apple trees near me are so full I’ll definitely be freezing some more for the winter.
