Recipe / Turkey Meatballs with Primavera Sauce
Ingredients:
-Turkey meat
-Red Wine, 1/4 cup
-1 can of tomatoes (put in food processor).
-2 1/2 tablespoons of Grapeseed oil (ideal for sauteeing and frying).
-2 potatoes peeled and cut in cubes.
-1 can of peas and carrots.
-Small portabella mushrooms (optional, if you like them)
-Trinity mix: onions, celery and green pepper (in Publix Produce).
-Italian seasoning 1 teaspoonful.
-Salt and Pepper to taste.
Preparation:
Put oil in a deep dish casserole, add the trinity mix, cook until the onion is transparent.
Then add the meatballs, (add salt and pepper to the meat) and let them cook for 5 minutes
on each side.
Next add the tomatoes, Italian seasoning, potatoes, cover and cook in low flame for 15 minutes.
Uncover the casserole, add the wine and the peas and carrots and cook for another 10 minutes.
It is good comfort food for a winter's night!
