Raj kachori "king of all kachoris"

Now a days 'm vadodara Gujarat in my elder sister's house.
Gujarat is famous for its rich cultural heritage, especially dance form like garba and dandiya raas and food like dhokla, fafda, khakra, raj khachori etc.
Every city of gujarat is well known for their food. Gujarat is also well known for its economic success in India.
today i have tried gujarti recipe in home that is "Raj khachori" It is also called "king of all kachoris".It is looking very heavy but it is light weighted snacks , person can eat 1 to 2 at a time.

In today post 'm would like share the recipe of Raj khachordi.
● course ~ snacks or starter.
●prep time ~ 10 minutes.
●cook time ~30 minutes

Ingredients ~

  • 1 cup of rava or sooji.
  • 4 teaspoons of wheat(chatpati atta).
  • 2 tablespoon of gram flour(besan).
  • salt (acc to taste).
  • 1/2 red chilli powder(laal mirch).
  • 1/8 black pepper(kaali mirch).
  • 1/4 sauf powder.
  • 1/8 baking soda.
  • 2 cup of water(add as the requirement)
  • 2 teaspoons of oil.

Chaat stuffing-

● 1/2 cups chaana.
●1/2 cups boondi.
● some laaiya.
●1/2 cups boiled potatoes cubes.
● fine sev (as required).
● beaten curd.
●1/4 sweet chutney.
●1/4 green chutney.
●1/4 tamarind chutney.
● 1 teaspoons chaat powder.
●1 small chopped onion.
● chopped green coriander leaves.
● black salt (as required).
●cumin powder.
●chopped green chilli.

How to make khachori recipe

step 1- take one cup of sava or sooji,
4 teaspoons of wheat flour(atta) and
2 teaspoona of gram flour(besan)
in a mixing bowl.

step 2- and also add salt, red chilli powder, sauf powder,black pepper and baking soda in a mixing bowl(qauntity given above).

step 3- drizzle 2 teaspoons of oil and mix it well.

step 4 - add the water as per the requirement and knead the dough, make firm dough.

step 5- knead the dough for 10 minutes ; if the dough is dry then some water to it.

step 6- cover the dough with moist cotton cloth and let dough rest for 30 minutes.

step 7 -after 30 minutes , knead the dough again and make medium sized ball, cover the ball with moist kitchen napkins.

step 8- do not make the kachoris too thin or thick, roll evenly.

step 9- hear the oil in the deep kadai to fry the kachoris, gently slid the kachori in the medium hot oil, the kachori will come up in a few seconds as soon as you add it.

step 10- gently nudge the khachori with the slotted spoons , so that khachori puff up like a poori.
fry unstill is turn to crispy and golden colour from both sides .

step 11- remove the crispy fried khachori on kitchen tissue to absorb the extra oil.

assembling and making raj kachori.

step 1- assemble all the chaat ingredients before you start making raj kachoris. Take one kachori and keep it in a serving plate.

step 2 - break the top crush of the kachori and make enough space inside for the chaat ingredients to accupy.

step 3- add some boiled chaana and boiled potatoes cubes inside the kachori.

step 4 -top with some beaten curd.
now add green chutney, sweet chutney and tarmarind chutney to it(as per the taste).

step 5 -sprinkle some black salt, cumin powder and red chilli powder(if required)

step 6- garnish it with laaiya ,sev ,boondi, chopped onion and chopped green coriander leaves.

Then serve this mouthwatering raj kachoris.😋

From the looks of it, it seems to me the recipe is going to be very tasty. Need to try at home. No no. I' won't. I'll ask my wife to prepare it
